Led by Giorgio Tonelli and Giovanni Guglielmoni, with a team drawn from regions across Italy, it brings honest, authentic cooking from their hometowns to the Square Mile: pasta made fresh on site every day, focaccia baked daily, biscuits flown in from Sardinia, oversized olives from Puglia, steaks and cuts from Surrey farms, fish and seafood, and a wide-ranging wine list.
