HOP Vietnamese is a fast-casual Vietnamese street-food group founded by Paul Hopper, the son of caterers who left a six-year City career as a financial analyst, travelled South East Asia and — diverted by a typhoon into Saigon — discovered phở from a street vendor and the gap for fast, decent Vietnamese food for time-poor London lunchers. "Real Vietnamese, real fast": rice boxes, phở, bánh mì, noodle salads, smalls and Viet coffee cooked to order in around three minutes, with fresh herbs, crisp veg, slow-simmered stocks and bright nước chấm dressings. Seven sites across London (London Wall, St Paul's, Bond Street, King's Cross, Tottenham Court Road) and Manchester (Market Street, Trafford Centre), plus office catering. Hires HOPPERs, HOP Masters, Assistant Managers and Managers on a clear internal-promotion ladder, with free food on shift, paid breaks, no zero-hours contracts, birthday off and regular team events.
