Norma

Norma is a Sicilian restaurant on Charlotte Street in Fitzrovia, named after Vincenzo Bellini's opera and set across a restored townhouse. Its cooking draws on an island shaped by centuries of Arab, Norman, North African and Spanish influence, with handmade pasta, seafood, citrus, pistachios and almonds, and many dishes built to be shared. It is part of the Stafford Collection. On hiring, Norma says its people are the heart of everything it does and that it looks for a strong work ethic, a flexible approach and first-class service skills, pointing to Stafford Collection colleagues who have stayed with the group for decades as evidence of long-term progression.
