Sud Italia brings the truly original Neapolitan pizza from the heart of Naples to the streets of London, with a dough of Italian flours, 20% whole wheat, sourdough starter, water and salt matured for 24 to 36 hours at room temperature. It trades from a kitchen in Old Spitalfields Market and a shop and restaurant at Aubert Park beside the Arsenal stadium, with delivery, takeaway and event catering.
