Apricity - the warmth of the winter sun - is the Michelin Green Star restaurant of chef-owner Chantelle Nicholson on Duke Street in Mayfair, recognised for leadership in sustainable gastronomy. Originally from New Zealand and a lawyer before moving to London in 2004 to cook, Nicholson is one of the UK's most respected voices on conscious dining, author of Planted, a board member of ReLondon and chef partner of Fjora at Copenhagen's 1 Hotel. Apricity champions seasonal British produce at its peak from small-scale and regenerative farms, foraged ingredients, sustainably caught UK fish, a low-waste kitchen and circular design, with a la carte and tasting menus (including a fully plant-based route), low-intervention and English wines, seasonal low-waste cocktails and a large non-alcoholic list. Downstairs is a Chef's Table for behind-the-scenes tasting menus, and the light-filled dining room takes private and corporate events. The team comes first: an 11pm curfew so staff get home safely, Hospitality Action mental-health support and trained Mental Health First Aiders, individual career plans with structured reviews, in-house development plus apprenticeships and WSET, and regular vineyard trips and supplier talks. Doers, makers and problem-solvers from all backgrounds are welcome; work experience and chef stages are encouraged by email, and current roles are listed on the Work With Us page.
