Moto is the UK's first independent Japanese sake bar, shop and eatery, on Maiden Lane in Covent Garden. Named for the fermentation starter at the heart of sake brewing - and for "origin" - it imports craft sake, shochu, gin, absinthe, whisky and Baird craft beers directly from small, passionate producers across Japan, many never before exported, and showcases their seasonality and terroir alongside the faces and stories behind each bottle. A sake sommelier leads flights of aromatic, light and rich styles, hot kan-zake is served by the carafe, a head bartender celebrated in Taiwan mixes an eclectic cocktail list, and everything on the shelves can be bought to take home or shipped across the UK. Food is built for pairing: obento boxes and an ever-changing otsumami menu of Japanese tapas. Moto also runs its Sake School classes, bespoke tastings and private events.
