The Ledbury is Brett Graham's three-Michelin-star restaurant on Ledbury Road in Notting Hill, opened in 2005 when the Australian-born chef patron was 26 and shaped over two decades into one of London's most celebrated dining rooms. Head chef Tom Spenceley leads the kitchen, with a long-serving front-of-house and sommelier team. The seasonal tasting menu showcases the finest British produce - Cornish bluefin, Orkney scallop, Scottish lobster, hay-aged pigeon, wild bilberries - alongside deer, Jersey cattle and Iberian pigs reared on Graham's own Capability Graham farms and mushrooms from the restaurant's cabinet. Six- and eight-course lunches (from £220) and an evening tasting menu (£295) are matched with discovery or classic and prestige wine pairings from a deep cellar. Graham's kitchen has been a proving ground for a generation of chefs, including The Clove Club's Isaac McHale.
