Trullo is an Italian restaurant on St Paul's Road in Highbury, opened by chef Tim Siadatan, who also wrote The Trullo Cookbook - a British take on Italian cooking. The kitchen works from a charcoal grill and a daily changing menu, and its signature dish is pappardelle with beef shin ragu, eight hours in the making. Trullo is a sister restaurant to Padella. On hiring, the restaurant says it is currently fully staffed but is always looking to meet passionate people, and takes speculative applications through role-specific addresses for reception and host, kitchen and front of house, listed on its careers page.
